With all of the sweets and treats that we encounter this time of year, it’s nice to have something a little bit closer to healthy! This fruity chocolate bark has a natural sweetness to it, but it isn’t overly sweet.
The key is to start with a good chocolate that you enjoy eating in its own. Do you prefer chocolate with fruity notes or something more bitter? Whichever is your preference, that’s the one to use for this.
16 oz good quality dark or semi-sweet chocolate
1 cup dried apricots
1 cup dried cranberries
1 cup roasted pistachios
Break the chocolate into small pieces and put into a microwave safe bowl or measuring cup. If you like them, Guittard and Ghirardelli both make good dark chocolate chips that work well in this recipe.
Put the apricots into a food processor and pulse to cut them into smaller chunks. Do the same with the cranberries and pistachios.
Melt the chocolate in the microwave, stirring every 30 seconds. It shouldn’t take more than 90 seconds to get a fairly smooth consistency.
Pour the chocolate into a baking sheet and spread it out until it is around ¼-inch thick.
Sprinkle the fruit & nuts over the top of the chocolate, gently pressing them into the chocolate.
Chill for 1 hour.
Break the chocolate into pieces. Put into a sealed container to enjoy!
This recipe is very modifiable! Choose your favorite fruits and nuts, and as much or as little as you prefer. Dried cherries and almonds are also very good. We sprinkled dried coconut over outs this year as well.
You can also drizzle the top with another chocolate if you’d like. Melt down 4-8 oz. of white chocolate and use a fork to drizzle it over the top of the bark before chilling it!
I keep a small container of it in my car in the cooler months for those mornings that I don’t have time to grab breakfast. There is so much flavor in this bark that it’s very satisfying. I break the pieces into around 1″ x 2″ shards so they are easy to grab and nibble on.
